From its base in London, Gonzalez Byass has collected some of Spain’s most prized sherries into its impressive portfolio, and among them is this XC Palo Cortado. It gets its depth of flavour from six months’ spent aboard the Juan Sebastián de Elcano: a Spanish marine training ship. The changing temperatures and movement of the ship give the wine intensity as it fortifies. You can expect woody notes with hints of nut and plenty of sea air. We’d recommend serving chilled with dessert.
